“House” Seasoning
Culinary fairy dust….
I noticed a natural proportion ratio in the seasoning most chefs use and tweaked it a little. There are only spices in this mix, no herbs, no onion or garlic powders, so add those to your liking.
In addition to a 2:1 ratio of salt to pepper, there is chili flake for a little kick, MSG for depth of flavor & umami, and just a touch of sugar for balance.
You will love this on EVERYTHING savory. Try making a compound butter and slather it on potatoes and corn on the cob, as a dry rub for a nice grilled steak or pork chops, use it to season your breading mix, your french fries, and more!
Mis en Place:
1 cup kosher salt
1/2 cup black peppercorns
1/4 cup chili flakes
2 tbsp MSG (optional, but use it!)
1 tbsp sugar (optional, but use it!)
Procedure:
Use a spice grinder or mortar & pestle to break down the peppercorns and the chili flake to as fine or coarse a powder as you like. If you don’t have a spice grinder or a mortar and pestle, this can also be made with ground black pepper and ground cayenne chili powder.
Combine pepper / chili flake blend with the other ingredients and use liberally on everything savory.
